		<description>Hi Kieran, I&#039;m eagerly awaiting a recipe from a Dutch neighbor for some cookies she made that I loved. She warned me that the measurements were by weight, and I figured I would just convert them to volumetric measurements. In the states, outside of a cooking school, I think measuring ingredients by weight is, well, foreign. 

It makes total sense, given all the different ways you can scoop flour or pack brown sugar. For chocolate recipes, they go by weight for chocolate, but butter comes in 1/2 cup &quot;cubes&quot; so it&#039;s easy to measure out.  

You bring up a lot of great points to why weight is superior measurement, but I&#039;m betting we yanks will need to drop the gallon in favor of liters for petrol before the kitchen is even considered for metric and measurement by weight.</description>
