Our cream here is about 40% fat, but not very processed, which is a blessing. I have noticed that using cream from various dairies makes a huge difference. What I might suggest is try different brands and see if there is a difference. Fresh cream, if you have a local dairy, would probably be best as long as the fat content is high enough...
