We've only made pineapple in sorbets, which works well. In general, I like fruit in sorbets, since the flavour really pops. Sorry not to be more help, but I'll see what I can dig up. I bought some coconut cream in the supermarket and some pineapple then it occurred to me I could make a pina colada (virgin) ice cream. I'm not sure should I just puree the pineapple with sugar overnight or should I cook it?
