I've heard the same thing, and I'm not sure what to suggest. We've only made pineapple in sorbets, which works well. In general, I like fruit in sorbets, since the flavour really pops. Sorry not to be more help, but I'll see what I can dig up.

As always your website is so fun and informative - One question, have you ever used pineapple to make icecream?
I bought some coconut cream in the supermarket and some pineapple then it occurred to me I could make a pina colada (virgin) ice cream. I'm not sure should I just puree the pineapple with sugar overnight or should I cook it? I heard that the enzymes in the pine can curdle the milk so I figured one of these two ways should fix that
Any input would be greatly appreciated

Thanks for the fun challenge! My newest batch of cinnamon icecream is chilling nicely in the freezer, ready for the weekend. It's now a firm favourite around here. Best of luck with writing up the book.

Thanks so much for the opportunity to test your recipes! This came along at just the right time, as I had extra cream in my fridge and just decided to try making ice cream for the first time.

And along with suggestions of apple pie and apple crumble, I humbly submit my own suggestion for a snack with cinnamon ice cream: http://littlelisa.wordpress.com/2007/11/29/mmmm-cinnamon/

Just a small Language mistake, though: I'm a her, not a him - French name... confusing for English speakers :)
